Sweet Pota-Toast


Ingredients

  • 1 Yam

Optional toppings:

  • Dried apricots (minced) + thinly sliced ham + mustard
  • Macadamia nut butter + hemp seeds
  • Cream cheese + pumpkin seeds + chives
  • Sauteed greens + soft-boiled egg
  • Mushrooms + ground spiced lamb
  • Karam garlic sauce + spiced lentils
  • Leftover chimichurri + brisket
  • Wilted winter greens + pesto
  • Sunflower seed butter + roasted apples
  • Chevre + fermented pickles
  • Buffalo sauce + bleu cheese
  • Spiralized zucchini + drizzle of olive oil + balsamic vinegar
  • Shaved Brussels sprouts + chopped roasted pecans
  • Coconut butter + a sprinkle of cinnamon

Directions

  1. Thinly slice a yam lengthwise (1/2" thick). Toast these slices a few times in your toaster, or use the highest/longest setting on your convection oven, until completely heated through and soft to the touch. (Careful, yam toast will be hot!)

  2. Top toasty yam slices with toppings of your choice.
