Ingredients
1 large red pepper, washed, roasted, peeled, seeds and membrane removed (or sub jarred roasted red pepper, drained)
3 medium tomatoes, washed and quartered
1/2 cup roasted almonds (unsalted) or nuts of your choice
2 slices of bread, toasted and roughly torn
2 garlic cloves, peeled
1 tablespoon red wine vinegar
1 teaspoon smoked paprika
Salt and pepper to taste
1/2 cup extra-virgin olive oil, as neede
Cayenne pepper or red pepper flakes to taste (optional)
1-2 tbsp of freshly washed and chopped parsley (optional)
Directions

Start by blending garlic in a food processor, scrape down bowl and add almonds, toasted bread, cayenne or red pepper flakes (optional). Blend into a paste.

Add red peppers, tomatoes, parsley (optional), paprika, salt and pepper to taste. Blend and scrape down bowl.

Slowly stream in vinegar and olive oil with the food processor still running. Blend until well combined.
