Ingredients
For the vinaigrette dressing:
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tablespoon honey or maple syrup
1 lemon, washed and zested
1/4 chopped basil leaves, washed
Red pepper flakes
Kosher salt and black pepper
For the salad:
1 cup cherry tomatoes, washed and halved
3 peaches, washed, pitted, and sliced
1 to 1 ½ cups pitted cherries, washed, pitted and halved
8 ounces burrata cheese

Combine the vinaigrette ingredients into a small bowl. Whisk together until well combined. Adjust salt and pepper to taste.

Add peaches, cherries, and cherry tomatoes in a large bowl. Toss with ⅓ of the vinaigrette and let sit for 10-15 minutes.
