Spicy Italian Pork White Bean & Kale Soup



  • 2 (14oz) cans white beans, drained and rinsed
  • 1c white onions thinly sliced
  • 1lb spicy Italian pork sausage
  • 1 qt chicken broth
  • 1 bunch kale thinly sliced


  1. In a medium stockpot over medium high heat, cook the sausage until brown, about 10 minutes (or until fully cooked).

  2. Add onions, cook until translucent then add broth and beans, bring up to to a boil, then reduce to a simmer.

  3. Add kale and simmer for 10 minutes and serve.
