Lightly season prawns with salt and pepper. Place a slice of apple on each prawn and wrap completely with bacon. In a large pan, melt ghee or coconut oil over medium heat. Arrange prawns on their sides in pan and cook for several minutes. Do not turn over until bacon is fully cooked and prawns become slightly crispy. Turn over and cook the other side until crispy. Remove from pan to serving tray. Garnish with lemon wedges, parsley and a drizzle of extra virgin olive oil if desired.
