Drain sardines, place in a bowl, and chop into chunks with a fork. Add celery and onion to sardines and stir. In a separate bowl, blend horseradish mustard, olive oil, lemon juice, sea salt and lemon pepper. Combine dressing with sardine mixture and serve.
