Raft Syrup’s West Coast Sparkle Cocktail



  • 1 oz. Momokawa Silver saké
  • 1 Tbls RAFT Hibiscus Lavender syrup
  • 1 Tbls fresh Meyer lemon juice
  • 4-5 oz. Scharffenberger Brut
  • ice


Inspired by the classic French 75, this cocktail is the perfect accompaniment to a spring day gathering of friends…and to Sweethear’s Meyer Lemon cake. Using Willamette Valley sake instead of cognac or gin lowers the alcohol content of the drink and lets the lovely sparkling wine from California shine.

  1. In a cocktail shaker or mason jar filled halfway with ice, add saké, RAFT Hibiscus Lavender syrup and lemon juice. Shake for 15-20 seconds. Strain into a glass and top with sparkling wine.

  2. Mocktail version:
    You can make a delicious non-alcoholic version of this drink. Substitute pear or apple juice for the saké, and sparkling water for the sparkling wine.
