Pa Jon (Gluten Free Korean pancakes)


Pancake Batter:

  • 1 cup Pamela’s Baking and Pancake Mix
  • 1 large egg
  • 3/4 water
  • 1 tablespoon oil


  • 1/4 cup shredded carrots
  • 1/4 cup shredded daikon
  • 1/4 cup julienned shiitake mushroom
  • 1/4 cup spinach or kale shredded
  • 1/4 lb pork (optional)

Jon dipping sauce:

  • 2 tablespoon soy sauce or tamari
  • 1 teaspoon minced garlic
  • 1 teaspoon chopped scallions
  • 1/4 teaspoon ground pepper
  • 1 tablespoon sesame seeds
  • 1 tablespoon sesame oil
  • 1 teaspoon cider or rice vinegar


  1. For the pancakes make one batch of Pamela’s Pancakes. Mix thoroughly. Mix in any or all of the vegetables and fillings directly into the batter. Cook over medium heat in a skillet or on a flat grill, flipping once until golden brown. Mix all ingredients for dipping sauce in a small bowl. Serve pancakes immediately with a side of sauce.
