Overnight Chocolate Chia Seed Pudding



  • 1 1/2 cups unsweetened almond milk (or other milk alternative)
  • 1/3 cup chia seeds
  • 1/4 cup cacao powder or unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 2-5 tablespoons pure maple syrup


  1. Add all ingredients except maple syrup to a mixing bowl and whisk to combine. Add maple syrup slowly and taste (sweeten to your personal preference). Cover and let rest in the fridge for at least 3-5 hours (or overnight) to thicken. You may also portion out in 4 mason jars to have prepared servings ready to go!
    For toppings, try berries, paleo-friendly granola, or shelled hemp seed. Leftovers should keep 2-3 days in the fridge.
