Olive Tapenade



  • 1 clove garlic, chopped
  • 1 3/4 cups whole pitted olives (Kalamata, black or green)
  • 1 anchovy fillet
  • 2 tablespoons capers
  • 1 teaspooon chopped fresh thyme or 1/4 tsp dried thyme leaves
  • 3 tablespoons fresh lemon juice
  • 6 olive oil
  • Optional: red pepper flakes to taste for a spicy version


  1. Combine garlic, olives, anchovies, capers, thyme, and lemon juice in the bowl of a food processor or in a blender. Slowly add the olive oil while the machine is running. Blend until a paste has formed or alternatively pulse several times to achieve a chunky and coarse tapenade. Add red pepper flakes, if using.

    Use as a sandwich spread, as a dip with crackers or bread, toss with hot pasta for a quick meal, toss with hot rice for a quick and different side dish, use as a condiment with grilled chicken or fish.
