Preheat oven to 350°F. Toss all the vegetables with extra virgin olive oil, salt and pepper and place in baking dish. Cover dish with foil and bake until vegetables are soft, approximately 35 minutes. Once vegetables are cooled, peel beets and garlic. Place all the vegetables into a blender and puree until smooth, adding water as needed to get a smooth puree.
