No-Mato Base



  • 2 bunches red beets, washed
  • 1 bunch carrots, peeled
  • 1 clove garlic
  • 2 medium onions, peeled and cut in half
  • 1-2 tablespoons extra virgin olive oil
  • 1/4-1 cup water, as needed
  • Sea salt and pepper to taste


  1. Preheat oven to 350°F. Toss all the vegetables with extra virgin olive oil, salt and pepper and place in baking dish. Cover dish with foil and bake until vegetables are soft, approximately 35 minutes. Once vegetables are cooled, peel beets and garlic. Place all the vegetables into a blender and puree until smooth, adding water as needed to get a smooth puree.
