Add 3 tablespoons of olive oil to a medium saucepot. Add onion, fennel, garlic, and Italian seasoning and saute until vegetables start to brown. Add no-mato base, coconut aminos, garlic powder, and bone broth to pot and bring to boil. Reduce heat and simmer for approximately 5 minutes. Remove from heat and stir in the fresh basil, remaining 2 tablespoons of olive oil and rendered animal fat. Taste and adjust seasoning as needed with salt, pepper, and balsamic vinegar.
