In a sauce pan, mix pineapple juice, lime juice, honey, and vinegar. Bring to a boil and reduce for about 30 minutes. Remove from heat and cool. Add chopped mint. Transfer fruit to a large bowl. Pour reduced glaze over fruit and stir to coat.
