Mint Pineapple Melon Salad



  • 2 cups pure pineapple juice
  • 2 limes, juiced
  • 1 tablespoon honey
  • 1/4 cup plum vinegar
  • 3 tablespoons mint, finely chopped
  • 2 cups cubed pineapple
  • 4 cups seasonal melon, cut into cubes or balls


  1. In a sauce pan, mix pineapple juice, lime juice, honey, and vinegar. Bring to a boil and reduce for about 30 minutes. Remove from heat and cool. Add chopped mint. Transfer fruit to a large bowl. Pour reduced glaze over fruit and stir to coat.
