In a small bowl, pour hot water over pitted dates just to cover. Let soak 20 minutes. Drain and reserve the date soaking water. In a blender combine cashew butter, drained dates, maple syrup, vanilla and salt. Blend until very smooth, scraping down sides as needed and adding only enough of the reserved date soaking water to allow the mixture to be blended.
Serve with sliced apples, as a spread on bread, as an icing for cake or cupcakes
