Massaged Kale Salad



  • 1 bunch kale, stemmed and finely chopped*
  • 1 lemon, juiced and zested
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic, minced
  • 1 teaspoon sea salt
  • 1/3 cup toasted nuts, such as almonds, pistachios, or walnuts
  • 1/4 cup unsweetened dried cherries or apple juice sweetened dried cranberries
  • 1/2 cup pitted kalamata olives, chopped
  • 1 tablespoon hempseeds


  1. Place the kale in a large bowl, add lemon juice, lemon zest, olive oil, garlic, and salt. Wash hands, then massage mixture until kale is softened, about 1 minute. Add nuts, dried fruit, olives, and hempseeds. Toss to combine ingredients. Rather than serving immediately, let salad rest for 15-20 minutes to allow the flavors to meld.
