Local Summer Salad



  • 3 cups corn kernels (about 6 ears), steamed lightly
  • 3 Italian sweet flat red onions, minced
  • 2 cups blueberries
  • 1/4 cup lime juice
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 8 basil leaves, thinly sliced
  • 3 big handfuls of leaf lettuce


  1. In a medium mixing bowl, combine corn, red onions, and blueberries.

  2. In a small mixing bowl, combine lime juice, olive oil, salt and pepper. Add the lime juice mixture to corn mixture and stir well. Adjust seasoning.

  3. In a large serving bowl, toss leaf lettuce and basil leaves with corn mixture and serve chilled or at room temperature.
