Jam Bars



  • 3-4 cups stone fruit jam


  • 3/4 cup butter
  • 1 cup packed brown sugar
  • 1 3/4 cups gluten free all-purpsoe flour
  • 1 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 cups gluten free rolled oats


  1. Preheat oven 350°. In a medium bowl, cream butter and brown sugar. In a separate bowl, stir together flour, soda and salt; add to butter mixture and mix well. Stir in rolled oats.

    Press half of the mixture evenly into the bottom of a greased 9” x 13” baking dish. Evenly spread a generous layer of jam on top. Top with remaining oat mixture. Bake in preheated oven for 20-25 minutes, or until light brown. Serve warm or at room temperature. These bars will keep well at room temperature for 3-5 days if tightly wrapped in plastic.

    ***For additional flavor and texture, add chopped fresh fruit or berries on top of the jam before you put the final layer on.
