Honey Roasted Summer Fruit



  • 1 lb apricots, peaches, plums or nectarines
  • 2-4 tablespoons honey
  • 1/2 teaspoon ground cardamom, cinnamon or ginger





  1. Preheat oven to 425°. Place fruit in 9 x 13 ovenproof dish. Drizzle with honey and sprinkle with spice of choice. Place in oven for 10 minutes, remove and stir. The fruit should be soft and breaking down. Cool and serve on yogurt, panna cotta, cake or ice cream. It is also delicious with toasted nuts.
