Grilled Peach Poundcake



  • 4 slices vanilla poundcake, about 1/2" thick
  • 2 tablespoons unsalted butter, melted
  • 4 peaches, cut in half, pit removed
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1/2 cup honey


A quick and easy dessert to highlight peaches!

  1. Preheat grill (or grill pan) to medium high. Lightly brush both sides of poundcake with melted butter. Brush peach fruit with olive oil and put fruit-side down on preheated grill. Allow to grill, turning once about 5 minutes per side. Add poundcake slices to grill, 4-5 minutes a side, until light brown grill lines form. Place poundcake on serving plate and spread ¼ cup ricotta cheese on each slice. Chop grilled peaches and add to each slice. Drizzle with honey and serve warm.
