Granola with Coffee, Nuts and Fruit



  • 4 cups rolled oats, thick cut
  • 1/2 cup walnuts, broken pieces
  • 1/2 cup shelled pistachios
  • 1/2 cup sesame seeds
  • 1/3 cup honey
  • 1 tablespoon course ground coffee
  • 1 teaspoon paprika
  • zest and juice of one orange
  • 1/2 cup raisins
  • 1/2 cup ground flax seeds
  • 1/2 cup dark chocolate chips


  1. Preheat oven to 300°F .

    In a large bowl, mix oats, walnuts, pistachios, and sesame seeds. Set aside. In a small sauce pan, heat honey to a simmer and add ground coffee. Let steep 10 minutes and strain.

    To honey, add paprika, zest, and juice. Stir into the large bowl of oats, walnuts, pistachios and sesame seeds coating evenly. Pour onto a large baking sheet and toast mixture in oven until oats are crisp. Pour into large bowl and add cherries, raisins, flax and chocolate chips. Chips will melt, so mix well at this point.
