Coconut and Banana Chia Pudding


For the pudding:

  • 1 1/2 cups coconut milk
  • 1/2 cup unsweetened shredded coconut
  • 4 tablespoons chia seeds
  • 2 tablespoons coconut nectar (or maple syrup)
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • 1/2 medium banana, diced


Easy and delicious chia pudding is both vegan and gluten-free, a special treat for everyone.

10 minutes plus chilling overnight
Makes 2 servings

  1. In a Mason jar or medium bowl, combine the coconut milk, shredded coconut, chia seeds, coconut nectar (or maple syrup), and vanilla paste (or vanilla extract).

  2. Shake jar or mix well to combine. Gently stir in diced banana.

  3. Cover and refrigerate overnight to soften chia seeds.
