Peel and devein the shrimp.
Bring 8 cups of water, seasoning and salt to boil in a large pot.
Add the shrimp to the pot and simmer until the shrimp float to the top and are just cooked through, about 3 minutes.
Drain the shrimp in a colander and top with ice to cool. Serve with your favorite cocktail sauce or remoulade for a spicy kick.
