Cashew Ricotta


Ingredients

Ingredients :

  • 2 cups raw cashews
  • 3/4 - 1 cup water
  • 1 TBSP nutritional yeast
  • 2-3 TBSP lemon juice
  • 3/4 tsp sea salt
  • 2 TBSP fresh chopped parsley

Directions

  1. Place cashews in a medium mixing bowl and add enough boiled water to cover. Let soak for 1 hour then drain. In a food processor, add ¾ cup water, soaked cashews and all remaining ingredients. Blend until creamy – mixture should be thick. Add additional water if needed. Adjust seasoning to taste.
