Berry Coconut Lime Pops



  • 1 can full-fat coconut milk
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 2 1/2 cups fresh or frozen berries, rinsed and drained
  • 1 lime, zested
  • 1/4 cup lime juice
  • dash of sea salt


  1. In a medium bowl, whisk together coconut milk, maple syrup, salt, and vanilla extract.
    In a blender, puree berries and ½ cup of the coconut milk mixture.
    Add the lime juice and zest to the remaining coconut milk mixture, and stir to combine. Pour alternating layers of the coconut milk mixture and the berry mixture into popsicle molds. Insert sticks and freeze until solid, this will take several hours.
