Bacon Cheddar Potato Pancakes



  • 3 strips bacon, chopped
  • 2 cups mashed potatoes
  • 1/4 cup green onion, chopped
  • 1 egg
  • 1/2 cup shredded cheddar cheese


  1. In a medium skillet, cook the bacon over medium heat. Reserve the bacon fat and transfer bacon to a large bowl. Add all other ingredients to the bowl. Mix well.

  2. In the same skillet heat 1 tablespoon bacon fat over medium high heat. Form potato mixture into eight pancakes. Cook four at a time until nicely browned on each side.
