Asparagus Fritters


For the fritters:

  • 1 cup garbanzo bean flour
  • 1 teaspoon curry powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2/3 cup cold water
  • 1/2 pound asparagus, trimmed and chopped into 1/2 inch pieces
  • several cups high heat oil, for deep frying


  1. In a medium bowl, combine garbanzo flour, curry and garlic powders, and salt and whisk to combine. Add water and stir to make a smooth batter. Stir in asparagus and set aside until ready to use. Heat oil in a medium-sized heavy duty pot to 350 degrees, or in a deep fryer according to directions. Do not fill the pot more that 1/3 full of oil. When the oil reaches temperature, add fritters, one heaping tablespoon at a time. Do not crowd the pan. Fry the fritters until golden brown, turning over if necessary. Remove fritters with a slotted spoon and drain on paper towels. Fry the remainder of the batter in batches. Serve with your favorite hot sauce, if desired.
