Ingredients
- 1 package New Seasons Market Potato Gnocchi 
- 1 cup fresh local corn, washed and shaved from cob 
- 1 cup cherry tomatoes, washed 
- 2 tablespoons butter 
- 3 cloves minced garlic 
- 2 tablespoons water 
- Salt and pepper, to taste 
- 1/3 cup freshly grated Cascadia Creamery Sleeping Beauty Cheese 
- Basil for garnish (washed, stems removed and chopped or torn) 
Directions
- 
                                                Prepare gnocchi according to package instructions.
- 
                                                Heat olive oil in a large skillet over medium heat. Add the drained gnocchi in a single layer and cook, without flipping, until golden and crispy. Remove gnocchi from pan and set aside.

                                                In the same pan, melt butter and add minced garlic. Cook until fragrant.
- 
                                                Add corn, cherry tomatoes, and water. Cook for about 5 minutes or until corn is tender. Burst tomatoes to release juices. Season with salt and pepper to taste.

                                                Return gnocchi to pan and cook for an additional minute.
- 
                                                Plate gnocchi and top with grated cheese and basil (Tip: freeze cheese for 20-30 minutes before using to make grating easier.)
