Ingredients
1 package New Seasons Market Potato Gnocchi
1 cup fresh local corn, washed and shaved from cob
1 cup cherry tomatoes, washed
2 tablespoons butter
3 cloves minced garlic
2 tablespoons water
Salt and pepper, to taste
1/3 cup freshly grated Cascadia Creamery Sleeping Beauty Cheese
Basil for garnish (washed, stems removed and chopped or torn)
Directions

Prepare gnocchi according to package instructions.

Heat olive oil in a large skillet over medium heat. Add the drained gnocchi in a single layer and cook, without flipping, until golden and crispy. Remove gnocchi from pan and set aside.

In the same pan, melt butter and add minced garlic. Cook until fragrant.

Add corn, cherry tomatoes, and water. Cook for about 5 minutes or until corn is tender. Burst tomatoes to release juices. Season with salt and pepper to taste.

Return gnocchi to pan and cook for an additional minute.

Plate gnocchi and top with grated cheese and basil (Tip: freeze cheese for 20-30 minutes before using to make grating easier.)
