Colcannon with Bacon
The side with main-dish energy, colcannon is a traditional Irish comfort food made with buttery mashed potatoes and tender cabbage. In this version, we used New Seasons brand ingredients, including bacon for a salty, savory crunch.

Ingredients

  • 3 pounds Russet potatoes, washed, peeled, and diced

  • 1 12oz package of New Seasons Bacon

  • 2 cups washed and sliced cabbage

  • 1 leek, washed and thinly sliced

  • 1/2 cup New Seasons Whole Milk

  • 3 tablespoons New Seasons Butter

  • Salt and pepper, to taste

Directions

  1. Place potatoes in a large pot and cover with water and a generous amount of salt. Bring to a boil and cook until fork-tender, about 15 minutes. Drain and return to the pot. 
  2. While potatoes are cooking, add bacon to a large skillet and cook until crispy. Carefully drain excess bacon grease, leaving about 1 tbsp in the pan. 
  3. Add sliced cabbage to the skillet with bacon grease and cook for about 5 minutes. Mix in leeks and cook for an additional 2 minutes, until tender and fragrant.  
  4. Mash potatoes with milk and butter until smooth and creamy. Fold the bacon, cabbage, and leek mixture into the mashed potatoes until well combined. Season with salt and pepper to taste.  
  5. Top with butter. Enjoy!
