Ingredients
1 16oz package New Seasons Market Potato Gnocchi
1 4oz packet New Seasons Market Prosciutto, sliced
1/4 cup butter
1 garlic clove, peeled and minced
1 tablespoon fresh thyme leaves, washed and chopped
Salt and pepper to taste
1 pound asparagus, washed and cut into thirds
1 cup frozen peas
Juice of half a lemon
1/3 cup grated parmesan cheese, plus more for topping
Directions

In a large skillet over medium-high heat, cook prosciutto for about 2 minutes or until crispy. Remove from skillet and set aside.

Add butter to skillet and melt. Add gnocchi and cook until brown. Stir in fresh thyme, garlic and cook for about a minute.

Stir in asparagus, peas, and cook until veggies are cooked through. Add salt and pepper.

Top with lemon and stir in grated parmesan and prosciutto.
