Ingredients
1 cup protein pancake or regular pancake mix
2 tablespoons butter, melted
1/3 cup plain Greek yogurt
1/3 cup milk
1/2 cup shredded cheddar cheese
1 jalapeno, washed and diced (optional)
1/4 cup cooked breakfast sausage or bacon chopped (optional)
5 eggs
Salt and pepper to taste
Note: Any yogurt fat content will work. Plant-based butter, yogurt, milk, cheese, eggs, sausage, or bacon may be substituted as needed.

Preheat oven to 350°F and lightly grease a muffin pan with cooking spray.

In a bowl, whisk 4 eggs and set aside.

In a medium-sized bowl, combine yogurt, milk, one egg, salt, and pepper. Mix until well combined.

Add pancake mix and melted butter to the wet ingredients. Fold in cheese, jalapeno, and any other cooked proteins.

Add a spoonful of batter to each cup, enough to cover the bottom.

Evenly distribute whisked egg mixture and distribute remaining batter to each cup.

Bake for 25-30 minutes, insert a toothpick and if it comes out clean, the breakfast bites are ready.
