Ingredients
Dressing
4 tablespoons olive oil
1 tablespoon hampagne vinegar
2 tablespoons orange juice
1 tablespoon lemon juice
1 tablespoon honey
Salt and pepper, to taste
Salad
4 oranges or pieces of citrus of your choice, peeled and segmented (we recommend Navel oranges, mandarins, and grapefruit)
6 ounces of baby arugula and butter lettuce, washed and dried
1/4 cup pistachios, roasted and chopped
1/2 cup resh pomegranate seeds
Optional Ingredients
1/4 cup crumbled feta
Fresh mint, washed and torn

Combine all dressing ingredients in a jar and shake well.
