Ingredients

Dressing

  • 4 tablespoons olive oil

  • 1 tablespoon hampagne vinegar

  • 2 tablespoons orange juice

  • 1 tablespoon lemon juice

  • 1 tablespoon honey

  • Salt and pepper, to taste

Salad

  • 4 oranges or pieces of citrus of your choice, peeled and segmented (we recommend Navel oranges, mandarins, and grapefruit)

  • 6 ounces of baby arugula and butter lettuce, washed and dried

  • 1/4 cup pistachios, roasted and chopped

  • 1/2 cup resh pomegranate seeds

Optional Ingredients

  • 1/4 cup crumbled feta

  • Fresh mint, washed and torn

Directions

  1. Combine all dressing ingredients in a jar and shake well.
  2. In a large bowl, combine arugula, butter lettuce, pistachios, pomegranate seeds, oranges, and feta.
  3. Drizzle with dressing and toss. Season with salt and pepper to taste. Top with mint and enjoy!
