In a heavy skillet brown chorizo in olive oil on medium high heat. Once browned add celery, chopped herbs, and onion, continue to cook until vegetables are soft. Reduce heat and add butter, garlic, and apricots. Once the butter is melted turn off heat and set aside.
Whisk eggs, egg yolks, and broth together in a separate container.
In a large bowl mix stuffing, chorizo mixture, and broth egg combo. Combine until bread is well coated.
Move contents into a greased deep baking pan or dutch oven, cover. Bake in a 350 degree oven for 20-25 minutes. Stir half way through.
