Fancy Beecher’s Mac



  • 1 lb macaroni, cooked according to package directions
  • 5 Tablespoons butter, slightly more for greasing the pan
  • 2 cups milk
  • 3 Tablespoons flour
  • 2 teaspoons dry mustard powder
  • ½ teaspoon cayenne, optional
  • 2 teaspoons each, salt and black pepper
  • 4 cups shredded Beecher’s Flagship cheddar
  • 2 cups crushed potato chips (*can sub bread crumbs or skip)


  1. Preheat oven to 350ºF and butter a 9 x 13 baking dish.

  2. In a large saucepan over medium heat, melt butter. Add milk and stir to combine.

  3. Slowly whisk flour into the milk mixture.

  4. Add mustard powder, cayenne (if using), and salt and pepper, and whisk to combine.

  5. Add cheese and stir well to melt cheese entirely and create a smooth sauce.

  6. Turn off heat and stir in noodles. Transfer to greased baking dish.

  7. Top with potato chips and bake in preheated oven for 15-20 minutes. Serve warm and enjoy.
