1/2 cup jarred pimentos, well-drained
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon green onion, rinsed and minced
1 1/2 teaspoon Tabasco sauce
1/2 teaspoon dried thyme
1 cup medium cheddar cheese, shredded
1 cup white cheddar cheese, shredded
Take half of the pimento and dice it small. Set aside in a medium bowl.
In a food processor, puree the remaining pimento with mayonnaise, sour cream, green onion, Tabasco, and thyme. Purée until smooth.
Add shredded cheese and mayonnaise mixture to reserved diced pimiento. Mix until thoroughly combined. Taste and adjust seasoning with salt and pepper. Use on sandwiches, or as a dip with potato chips, crackers, or crudités.
