Blueberry Compote
This sweet, syrupy blueberry compote comes together quickly with just three simple ingredients. We love it spooned over New Seasons Vanilla Bean Ice Cream topped with fresh blueberries and lemon zest.

Ingredients

  • 2 cup of blueberries, washed (plus more for topping, optional)

  • 2 tablespoon of sweetener (honey, maple syrup, or granulated sugar)

  • 1 tablespoon of fresh lemon juice

Optional Ingredients

  • Fresh lemon zest (optional)

Directions

  1. In a pot, simmer blueberries with sweetener of choice and lemon juice until thick, stirring often, about 10-15 minutes. 
  2. Allow to cool slightly and then spoon it over ice cream, Dutch babies, or shortcake. 
  3. Top with fresh blueberries and lemon zest to taste.
