Ingredients
Grilled Cheese
1 apple , washed, core and seeds removed, and sliced
1 tablespoon of butter
8 ounce New Seasons Oregon Coast Cheddar
4 slices of bread (we recommend New Seasons Organic Peasant Levain)
Caramelized Onions
1 medium onion , peeled and sliced to desired thickness
1 1/2 teaspoon olive oil or butter
Salt to taste
Crispy Sage Leaves
1/2 cup of fresh sage leaves , removed from stems, washed, and patted dry.
1/3 cup of olive oil

For Crispy Sage Leaves, in a small pan, heat oil over medium-high heat to about 350°F and fry sage leaves in small batches until they slightly darken. Blot excess oil and set aside.

Heat olive oil or butter in a pan over medium heat.

Add the onions, stirring to coat. Sprinkle with salt. Cook until soft, stirring occasionally, for about five minutes.

Turn down the heat to medium-low, adding water as needed to deglaze the pan, until onions reach desired caramelization.

While the onions are cooking, slice the apple and cheese. Set aside.

Once onions are cooked, remove from the pan and set aside.

Wipe down pan, keeping heat on medium-low, and add 1 tbsp of butter.

Add two slices of bread to the pan. Top with cheese, onions, apples, and fried sage. Top with remaining slices of bread.

Cook until golden brown on both sides. If needed, cover the pan to melt the cheese through.
