Simple yet full of flavor, this recipe combines tender, flaky cod with bright citrus, a touch of garlic, and plenty of rich, melty butter.

Ingredients
4 cod fillets, about 4-6 oz each
2 tablespoons olive oil
4 tablespoons butter
Salt and pepper, to taste
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
1-2 cloves of garlic, peeled and minced
Juice of one fresh lemon
2 tablespoons fresh parsley, washed and chopped

Rinse and pat dry fillets. Season both sides with paprika, cayenne, salt, and pepper.

Heat a large skillet over medium-high heat. Add olive oil.

Once the oil is hot, place cod fillets in the pan. Cook for 3-5 minutes per side until the fish is opaque, flakes easily, and has reached an internal temperature of 145°F. Remove cod from the pan and place on plate.

Lower the heat to medium-low and wipe out the pan.

Add the butter to the pan to melt, swirling the pan occasionally to ensure the butter doesn’t burn.

Add garlic. Sauté for about 15 seconds until the garlic is translucent and fragrant.

Add the lemon juice and fresh herbs to the pan. Add salt and pepper to taste.

Spoon the sauce over the cooked cod fillets. Serve and enjoy!
