Roasted butternut squash, carrots, and shallots make this comforting fall soup an easy seasonal favorite. Best of all, it's ready in just 40 minutes! We love it topped with toasted nuts or seeds, fried sage, and a drizzle of heavy cream or full-fat canned coconut milk.

Ingredients

Soup

  • 1 small butternut squash , washed, peeled, and cut into 1-inch cubes

  • 3 large carrots , washed, peeled, and cut into 1-inch pieces

  • 4 medium shallots , ends and outer skin removed

  • 2 1/2 tablespoon of olive oil

  • 1 cup of broth (chicken or vegetable)

  • Salt and pepper, to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/2 teaspoon cumin

Optional Ingredients

  • 1/2 teaspoon cayenne powder

Toppings

  • Toasted nuts or seeds

  • Dried cranberries

  • Heavy whipping cream

Crispy Sage Leaves

  • 1/2 cup of fresh sage leaves , removed from stems, washed, and patted dry.

  • 1/3 cup of olive oil

Optional Ingredients

  • Salt

Directions

  1. For Crispy Sage Leaves, in a small pan, heat oil over medium-high heat to about 350°F and fry sage leaves in small batches until they slightly darken. Blot excess oil and set aside.

  2. Preheat oven to 400°F. 

  3. Toss squash, carrots, and shallots in a sheet pan with oil and seasonings, and roast for 20-30 minutes until the vegetables have softened and caramelized. 

  4. Add the roasted veggies to a pan with the broth and simmer over low heat for about 10 minutes to allow the flavors to meld. 

  5. In a blender, combine vegetables and broth in batches and blend until smooth. Ensure your blender lid is vented and place a kitchen towel over the vent to allow steam to escape without liquid splattering. 

  6. Ladle into bowls and add desired toppings. Enjoy!
