This warm summer salad has a little bit of everything: couscous, tomatoes, corn, and protein-packed tinned fish. The best part? It’s light enough to be a side but filling enough to be an entrée.

Ingredients

  • 2 cans tinned fish (tuna, mackerel, or sardines in oil)

  • 1 1/2 cup couscous

  • 2 cup water

  • 1 cup cherry tomatoes , washed and halved

  • 1 ear of corn , washed and kernels removed

  • 1 garlic clove peeled and minced

  • Juice and zest of one washed lemon

  • Salt, pepper, and red pepper flakes to taste

  • Fresh parsley , washed and chopped for garnish

Directions

  1. Bring water and a pinch of salt to a boil. Add couscous and cook for about 5 to 10 minutes or until the couscous is fluffy. Let rest for about 5 minutes.

  2. In a separate pan over medium-high heat, add oil and garlic and cook until fragrant. Toss in tomatoes, salt, pepper, and cook until tomatoes begin to burst and thicken. 


  3. Add corn and tinned fish (including oil, according to taste) and heat through. Toss in the cooked couscous and add lemon juice and salt and pepper to taste. 


  4. Serve warm, topped with lemon zest, red pepper flakes, and a generous amount of parsley.
