Buying a whole fish is a whole lot easier than it sounds. During our annual Whole Fish sales, we make it simple with custom cuts, easy recipes, freezer tips, and the option to skip the line by preordering online.
What’s better than sustainably harvested, peak-season fish? Having a whole lot of it.
New Seasons’ annual Whole Fish sales give you the chance to stock up on the best of the season—from mild, sweet halibut to rich, robust sockeye.
We know buying a whole fish can feel a bit intimidating, but it’s actually pretty simple, more economical (you save more per pound than buying fillets), and even a little fun.
Here’s How It Works:
Preorder Your Whole Fish Online
Skip the grocery lines and order online! You can even choose your custom cuts—and pick up at your neighborhood New Seasons during our annual Whole Fish sales.
Shop In-Store During the Sale
Just follow the Whole Fish Sale signs to the seafood counter. Our friendly fishmongers will help you choose the perfect catch and prep it just the way you like—while you finish the rest of your list. Easy-peasy!
Besides saving money, going whole comes with some great perks:
- Better freshness — fish stays fresher longer when kept whole
- Less waste — you get more from every fish
- More flexibility — grill, roast, or freeze for later
- Perfect for gatherings — or meal prep for the week ahead
What a Catch—Now What?
Not sure how much fish to order? Don't worry—we've got you. Here's a handy guide for how many folks each whole fish can feed.
Sockeye Salmon
A 3–5 lb whole Sockeye feeds 4–8
Coho Salmon
A 3–8 lb whole Coho feeds 4–10
Halibut
A 10–20 lb whole halibut feeds a crowd. About 13 servings for a 10 lb fish.
Your Fish, Your Way
Our fishmongers will cut your fish exactly how you like it—just let us know your preference:
- Whole (cleaned)
- Fillets
- Steaks
- Half fillets, half steaks
Pro-tip: Keep the bones and make a delicious bone broth (or stock)!
These cut options are also available and listed online when preordering, so you'll know exactly what you're getting!
Enjoy Some Now, Freeze the Rest
Buying a whole fish doesn't mean you gotta eat it all in one go. If there's no whole fish party on the horizon, freeze some. You could have grilled salmon with veggies one night and tacos, skewers, pasta, or a sheet-pan meal another night.
Tips for Freezing
- Store in butcher paper in your freezer for up to 60 days
- For longer storage, vacuum seal at home
- Thaw in the fridge overnight before cooking

Seasonal Availability
Due to the seasonality of wild fisheries, we finalize the Whole Fish sale dates roughly three weeks before each sale so you can plan ahead (and make room in the freezer!).
Halibut – May
Sustainably harvested from the Northern Pacific and delivered fresh—never frozen—for peak flavor. Mild, sweet, and perfect for grilling, roasting, or pan-searing. Don’t toss the bones—they make great stock!

Fresh, sustainably harvested Pacific Sockeye—rich, flavorful, and only here for a short time. Don’t miss this seasonal favorite while it lasts!
Albacore Tuna – August (Special Order Only)
Fresh, wild Oregon Coast Albacore. Excellent for grilling, canning, or pan-searing.
Coho Salmon – September
Fresh, wild, and sustainably harvested with a balanced flavor between rich and mild, Coho is great pan-seared, baked, or grilled—and it freezes beautifully.
