Crab & Avocado Salad with Citrus Vinaigrette


Ingredients

Salad:

  • 2 cups crab meat
  • 1 ripe avocado, peeled and chopped
  • 1 head of romaine lettuce, chopped

Vinaigrette:

  • 1 small shallot, finely chopped
  • 3/4c extra virgin olive oil
  • 1/4 c white balsamic vinegar
  • 1 navel orange, zest & juice
  • 1 Meyer lemon, zest & juice
  • 1 Tbs honey
  • 1 tsp salt
  • 1 tsp black pepper

Directions

  1. Combine crab and avocado in a large bowl. In a small mixing bowl, combine vinaigrette ingredients and pour over crab avocado mixture. Enjoy on top of chopped romaine.
