Coconut Quinoa Slam


Ingredients

Ingredients:

  • 1 1/2 cups full-fat coconut milk
  • 1 cup quinoa, soaked overnight in pure water, drained, rinsed

Directions

  1. Bring coconut milk to a boil. Add quinoa, cover and reduce to a simmer. Cook 15-20 minutes or until liquid is absorbed. Can be eaten plain or topped with nuts/seeds and fresh fruit.
