Spicy Asian Slaw


Ingredients

Lime Dressing:

  • 2 fresh limes, juiced
  • 1 teaspoon sesame oil
  • 2 tablespoons gluten-free tamari
  • 2 tablespoons rice wine vinegar

Veggies:

  • 1 head Napa cabbage, thinly sliced
  • 1 carrot, grated
  • 1 red bell pepper, thinly sliced
  • 4-6 green onions, chopped
  • 2 tablespoons grated ginger
  • 3 tablespoons chopped cilantro

Peanut Sauce:

  • 3/4 cup peanut butter
  • 2 tablespoons raw local honey
  • 3-4 tablespoons gluten-free tamari
  • 1 dash crushed chili pepper
  • 3 cloves garlic
  • 3/4 cup coconut milk

Directions

  1. Mix all dressing ingredients thoroughly. Toss all vegetables in a large bowl. Coat veggies with lime dressing.

    Meanwhile, combine all peanut sauce ingredients in a food processor or blender and blend until thoroughly mixed. Pour one cup of peanut sauce over dressed vegetables; plate and garnish with peanuts and additional chili if desired.
