This is a simple survival guide and not a comprehensive list of gluten-free foods. Use this resource until you can gather more information.
Gluten is the name given to certain proteins found in cereal grains such as wheat, barley, rye and their derivatives. Currently oats are also not recommended in a gluten-free diet because of potential cross-contamination.
Grains and Beans Allowed:
Rice, Corn, Soy, Tapioca, Beans, Sorghum, Quinoa, Millet, Buckwheat, Arrowroot, Amaranth, Teff and Nut fours.
Grains Not Allowed in Any Form:
Wheat (Durum, Graham, Semolina, Kamut, Spelt), Rye, Barley, Triticale
Foods That Often Contain Gluten:
- Breads and Breading
- Broth
- Coating Mixes
- Communion Wafers
- Croutons
- Imitation Bacon
- Imitation Seafood
- Marinades
- Pastas
- Processed Meats
- Roux
- Sauces and Soy Sauce
- Self-basting Poultry
- Soup Bases
- Stuffing
- Thickeners
Always Read the Labels
Some ingredients are questionable and may or may not contain gluten. Always verify that these ingredients are not derived from prohibited grains:
- Brown Rice Syrup (frequently made from barley)
- Caramel Color (sometimes made from barley)
- Dextrin (usually corn, but may be derived from wheat)
- Flour or Cereal Products
- Hydrolyzed Vegetable Protein (HVP), Vegetable Protein, Hydrolyzed Plant Protein (HPP), or Textured Vegetable Protein (TVP)
- Malt or Malt Flavoring (usually made from barley)
- Malt Vinegar
- Modified Food Starch
- Soy Sauce (contains wheat)
